Our expert master distiller Paul Burnett then carefully selects the most exquisite Whisky that demonstrates complexity, brightness and notes of luscious butterscotch.
Our Process
Working with local artisan Coopers, our Whisky undergoes meticulous aging in charred oak barrels, imparting a unique symphony of wood and fire notes.
We utilse our historic and uniquely South Australian Copper Pot stills that have been distilling spirits for over 100 years.

In traditional Lunar New Year celebrations, the Horse represents a time of action and progress, where bold decisions and adventurous spirits are often rewarded.
This sense of fearless momentum is vividly brought to life through Chris Yee’s striking artwork shown of our whisky, which features a fiery horse galloping across a surreal landscape.

Aged three years in charred oak barrels to represent the element of fire & impart smokey complexity.
Hints of indulgent toffee, rich raisins, delicate vanilla, & luscious butterscotch.
Finished in prestigious 15YO Galway Pipe Tawny casks, to add richness & depth.
